Lentil and moringa soup

Thanks to the plant-based protein in both lentils and moringa this is one protein-packed dinner. Warming, nourishing and simple to make, this lentil and moringa soup is the perfect meal for when the nights get colder.

Ingredients (serves 2)

2 carrots

1 cup green lentils

3 cups water

4 cups vegetable stock

1 tsp Aduna Moringa Powder

Fresh coriander, chopped

Salt and pepper, to taste

Method

Finely chop the carrots and add them to a saucepan with the lentils and water.

Bring to a boil then reduce the heat and simmer for approximately 25 minutes, or until the lentils are soft.

Leave to cool, before adding to a blender with the remaining ingredients and blending until smooth.

Warm through in a saucepan and serve with crusty bread.
