This kale and leek soup recipe makes a supergreen, super tasty meal. Make up a big batch of this health-boosting blend and store it in the fridge or freezer for a readymade healthy meal whenever you need it.
Ingredients
You’ll need a Vitamix (or similar blender) to make this recipe
200g large leeks, cleaned, sliced 6cm thick
2tsp olive oil
335g fresh kale, chopped, stems removed
960ml vegetable or chicken stock
Salt and pepper, to taste
Method
Sauté leek in olive oil until soft. Add kale and cook until wilted.
Add stock and cook for 30 minutes on low heat and let cool for 15 minutes or until the temperature reaches 65°C.
Place soup into the Vitamix container and secure lid. Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 45 seconds until smooth.
Pour mixture back into pot and heat for 10 minutes, or just until it begins to simmer. Season to taste with salt and pepper.
