Healthy date slice recipe

You can’t go wrong with this healthy date slice recipe. There’s no added sugar or butter – the sweetness comes courtesy of the dates and coconut oil!

Ingredients (Serves 6-8)

400g oats
400g medjool dates
100g raisins
3tbsp coconut oil
4tbsp chia seeds
1tsp ground ginger
1tsp mixed spice

Method

Preheat the oven to 200ºC. Combine the chia seeds and 240ml of water in a medium sized mixing bowl. Leave this for approximately 10 minutes to form a gel.

Place the dates and coconut oil in a saucepan over a medium heat. Allow to melt for about five minutes or until the dates are soft.

Next, place the dates and coconut oil into a blender with 300ml of water and blend until it forms a smooth paste.

Add the date mix, oats, raisins and spices to the chia seed mix, combining well.

Line a baking tray (about 6in × 9in) with baking paper, or grease it with coconut oil. Then pour the mix into it the tray and spread it evenly.

Place the tray in the oven for about 35-40 minutes, until the top turns golden.

Leave to cool in the tin, before cutting it into bars. Store the bars in an airtight container at room temperature or, for a firmer slice, in the fridge.
