Healthy curry
Ingredients:
1 chopped onion
1 cloves of garlic
1 chopped chilli
2 tsp of garam masala
1 tsp of cumin
1tsp of turmeric
1 pinch of sea salt
3-4 medium-sized chopped tomatoes
½ pint of stock (or bouillon)
Half a creamed coconut block
Method:
Gently sauté the onion, garlic and chilli in a pan.
When softened add the garam masala, cumin, turmeric and sea salt.
Cook gently for one minute and then add the remaining ingredients.
Add vegetables, then a protein source like lamb or chicken.
Cover the pan and cook on a low heat until the protein and vegetables are cooked through.
Serve with the bhajees, or with a little rice.
