Healthy burger and chips recipe

Serves 5
For the chips:
* 500g sweet potato,
* 500g white potato (used Maris Piper Potatoes from Waitrose),
* 25g Olive Oil,
* 5g Vinegar (balsamic or malt),
* Pink salt and paprika.
For the burgers:
* 1000g extra lean steak mince,
* 2 medium whole eggs,
* 1 medium egg white,
* 100g low-fat mozzarella,
* 30g basil pesto,
* Oregano and sage.
To make the chip scrub all potatoes and remove ends/horrible bits.
* Slice into 3-4” length pieces, 1 cm thick, of varying heights (your preference).
* Place into a large mixing bowl and add olive oil and vinegar. Mix well till all chips are ‘brushed’. Add seasoning (don’t be shy!).
* Place on a baking tray evenly spread out. Pre heat (electric fan) oven to 200 degrees.
* Cook for 25-30 minutes, then turn all chips, and cook for a further 10-15 minutes (longer for a crispier chip!).
* To make the burgers start preparing around 20 minutes after you have put the chips in the oven.
* Making and properly shaping these stuffed burgers is made a lot easier with a simple burger press.
* Place mince into a large mixing bowl and break up with a fork. Add all eggs and white, mix well. Add oregano and sage and mix through.
* Slice mozzarella into 5 pieces. Evenly divide pesto onto the mozzarella.
* Weigh out around 225g of mince into a separate bowl, and divide two even sections.
* Shape a burger with one half, then place the mozzarella and pesto on top in the centre, and place the other remaining half of the mince on top- enclosing the filling. Repeat four more times!
* Turn on and oil your George Foreman Grill; brush with coconut oil or use an olive oil spray. Place burgers into foreman for 5-7 minutes. (Cooking time on a barbeque: 10-15 minutes.)
* The burger and chips go well with wholemeal baps, tomato and gherkin; Mixed salad; Homemade mayonnaise; Spinach.
