Ham-wrapped asparagus tips recipe

If you’re after a quick and simple starter this ham-wrapped asparagus tips recipe does the job.

These are delicious eaten straight away or you can cool them and keep in the fridge for up to two days. They can be eaten cold or thoroughly reheated.

Makes 8

8 asparagus tips or trimmed spears
8 thin slices of lean ham, visible fat removed
Salt and freshly ground black pepper
Low calorie cooking spray

aPreheat the oven to 180°C/Fan 160°C/Gas 4 and line a baking sheet with non-stick baking parchment.

Cook the asparagus for 1-2 minutes in a large saucepan of lightly salted boiling water. Drain well, wrap a slice of ham tightly around each asparagus tip and place on the prepared baking sheet. Season well, spray lightly with low calorie cooking spray and bake for 5-6 minutes or until the ham is lightly browned and the asparagus is just tender.
