Veggie fans will love these easy peasy griddled aubergine rolls. They’re low-cal, high flavour and so quick to whip up.
Great as a starter or have as a main with a side salad.
Makes 8 rolls
1 aubergine
Low calorie cooking spray
Small handful of finely chopped fresh parsley, to garnish
For the filling
100g quark
1 bottled roasted red pepper in brine, drained and chopped
1 garlic clove, crushed
Large handful of finely chopped fresh coriander
Finely grated zest of ½ lime
Salt and freshly ground black pepper
First, mix the filling ingredients in a bowl. Season well and set aside.
Slice off and discard the aubergine ends, then slice lengthways into eight thin strips and season to taste.
Heat a non-stick griddle over a high heat until smoking hot and spray the aubergine slices with low calorie cooking spray. Griddle the slices for 1-2 minutes on each side, then place the slices on a clean work surface. You may need to do this in batches.
Place a tablespoonful of the filling at one end of an aubergine slice. Roll it up tightly, starting from the filling end. Repeat until you’ve used up all of the aubergine and filling. Sprinkle with parsley and eat straight away or cool and keep in the fridge for up to 3 days. These are great eaten cold.
