A gorgeous green pea houmous dip that can be served with carrot, pepper and celery sticks, or with warm toasted pitta bread – or both! Alternatively, use the houmous as part of a main meal served with grilled fish or chicken and salad. Delicious.
Ingredients
(serves 6; 135 calories; 6.3g protein; 8g carbs; 2.3g sugars; 9g fat; 1.3g sat fat; 4.9g fibre; 0.1g salt)
500g frozen peas
3 cloves garlic, crushed
3tbsp light tahini paste
Juice of 1 large lemon (add more if preferred)
1tsp ground cumin
1tbsp olive oil
Chilli powder
Sea salt and black pepper
Method
Add the peas to a pan of boiling water and simmer for 3 minutes. Drain the peas and put in a food processor along with all the other ingredients; mix well until a paste is formed. Season with sea salt and black pepper according to taste. Chill for 45-50 minutes.
Serve the green pea hummus in a dipping bowl, form a small hole in the centre of the mixture and add a tablespoon of olive oil and lightly dust with chilli powder.
