Get a taste of the Med with this Greek pitta salad with honey and mint recipe. The dish includes juicy tomatoes, crunchy cucumber, olives and feta cheese combined with a honey yoghurt and mint dressing – true sunshine food! Serves 2
Ingredients
½ cucumber, seeds removed, sliced
3 medium tomatoes, diced
1 red onion, sliced
100g black Kalamata olives
180g feta cheese, cubed
4tbsp Rachel’s Greek Style honey yoghurt
Handful of fresh mint, chopped
2tbsp extra virgin olive oil
Black pepper
Pitta breads
Combine the cucumber, tomatoes, onion, olives and feta in a bowl.
In another small bowl take the yoghurt, mint, oil and pepper and mix well. Pour over the salad ingredients and toss together. Serve immediately with warm pitta breads.
Tip: Why not make the pitta breads into croutons for extra crunch? Simply brush with olive oil and bake until crisp.
