Frozen yoghurt bark recipe

This frozen yoghurt bark recipe is great for making with the kids. The delicious coconuty bars can be finished with your own choice of topping – we used pistachios, blueberries, coconut flakes and pumpkin seeds – and stored in the freezer for when you next fancy a tasty and insanely healthy treat.

 

Ingredients

(serves 6-8)

2 x 250g tubs mixed fruit CO YO

2-3 handfuls of mixed nuts/seeds/dried fruits (we used pistachios, blueberries, coconut shavings and pumpkin seeds)

 

Method

Mix all the ingredients in a bowl. Line a baking tray with greaseproof paper and spread the mixture evenly on top.  Pop in the freezer for 2 hours.

Take out of the freezer and let the bark thaw slightly before breaking it into bite-size pieces and enjoying.  To store, keep bark in an airtight container in the freezer.
