Fresh berries are one of those foods that taste great and are packed full of vitamins and antioxidants. So that pretty much makes this fresh berry crumb recipe a health-boosting food. Serve it with Greek or coconut yoghurt rather than cream.
Ingredients (serves 6)
For the berry mix:
100g raspberries
100g blackberries
100g blueberries
100g strawberries cut in half or if they are big sliced in three
2tbsp honey
1tsp fresh lemon juice
For the crumble mix:
75g almond flour
30g shredded coconut
2tbsp honey
2tbsp olive oil
Method
Preheat the oven to 200°C.
Toss the berries with the lemon juice and honey into a medium-size oven pan and then gently turn the berries in the sweet marinade.
Mix almond flour, coconut, honey and oil in a bowl. Then pour the crumble mixture on top of the berries and place the pan in the middle of the oven. Bake for 20 minutes.
