Planning recipes, or meals ahead of time makes a great way for you to come up with ideas of how you can sneak in an extra portion of veggies. Sometimes, seeing a plate stacked with greens isn’t enough to get your taste buds going, so planning ahead can allow you to get creative, and come up with new ways to sneak in an extra hidden vegetable. Two ways I like to do this, is by blending courgettes and red peppers into a tomato sauce, or chopping up all of my left-over vegetables and making them into a delicious vegetable chilli.
