- Make soups
This may seem like an obvious option, but I definitely think soups are the easiest way to pack more vegetables into your diet. I tend to find I crave more carbohydrates around this time of year, so might not always expect a soup to fill me up. However, by packing in lots of hearty root vegetables and some good carbs like sweet potatoes into a chunky winter soup, not only can you make something that’s filling, but also has a good variety of texture. Creating a winter soup is also a great way to cook with seasonal vegetables, so this way you can choose fresh, locally sourced ingredients that have their maximum amount of nutrients.
