Eggs Florentine is not only a tasty breakfast, it also carries a hefty nutritional punch, particularly when you throw the vitamin-packed spinach into the equation.
Ingredients
2 poached eggs
A handful of spinach
25g of grated low-fat cheese
A thin slice of bread, ideally wholemeal
Method
Fill a small pan with cool water and bring it to the boil, turn down to a simmer and crack the eggs one at a time into a small bowl and gently tip into the simmering water. It should take around three to four minutes to poach your eggs.
Toast your bread and top with your eggs, spinach and cheese.
