Egg white breakfast pizza

Cook up this easy egg white breakfast pizza in minutes.

Who says you can’t have pizza for breakfast? At only 225 calories per portion, this egg white breakfast pizza makes a great weekend brunch with some toast or a smoothie on the side. Feel free to mix up the vegetables to use up whatever you have on hand.

Ingredients (serves 4)

6 egg whites

2tbsp skimmed milk

35g spinach, chopped

¼tsp dried mixed herbs

1tsp olive oil

1 tomato, sliced

20g mature cheddar, grated

Sea salt and black pepper

Method

Preheat the grill to low.

In a large bowl, whisk together the egg whites, milk, spinach and herbs and season with salt and pepper.

Place a large, flameproof frying pan or skillet on the hob over a medium heat and add the oil. Pour in the egg white mixture and cook gently for three minutes.

Top the breakfast pizza with the sliced tomato and scatter over the cheese. Place the pan under the grill and leave to cook for 10 minutes. Transfer to a plate and serve hot.
