Easy spelt salad

If you’re after an easy go-to lunch that will fill you up and tastes delicious, but you can get all the ingredients for on your way to work then try this easy spelt salad recipe. Spelt’s great if you’re going gluten-free, or if you’re after a grain that will really see off the mid-afternoon munchies. This make two day’s worth of lunches and is fresh and good for-you.

Easy spelt salad

Ingredients
250g Packet spelt (I love Merchant Gourmet‘s one)
8 sun-dried tomatoes, sliced
1 packet of rocket, finely chopped,1 tin tuna in water, drained
1 packet mixed olives and feta (from the chiller)
1 packet cherry tomatoes, cut in half

Cook the spelt according to packet instructions. Leave to cool for 1 minute. Fluff up with a fork.

Combine with all the other ingredients. Split into 2 portions and set aside for tomorrow’s lunch.

Serve.

It really is the easiest and tastiest salad!
