Easy healthy pancake recipe

If you fancy a treat for brekkie, try this easy healthy pancake recipe. I even made a Vine so you can see how simple it is!

If you’ve got heart-healthy rolled oats lying around but don’t fancy porridge, then whip up these super easy healthy gluten-free pancakes. With just 4 ingredients that you’ll definitely have in your cupboard, they’re an awesome quickie breakfast.

Makes 6 pancakes

50g porridge oats
1 egg
150ml semi skimmed milk
Pinch of cinnamon
Coconut oil to fry

First, make oat flour, simply pop the oats in a Nutribullet or blender until you form a fine flour.

Combine all the ingredients in your blender.

Heat a pan and add a small amount of coconut oil.

Drop a small amount of batter into the pan and cook. Once cooked (about 1-2 mins), flip over and cook on the other side.

Serve with low-fat natural yoghurt and berries.
