These remind me of the cookies my sister and I used to eat when visiting family in Holland at Christmas. The combination of spices makes the whole house smell amazing!
IngredientsĀ (makes 8 large cookies)
120g ground almonds
150g spelt flour
2 eggs
50g whole almonds
1tbsp honey or maple syrup
2tbsp coconut oil
Drop of vanilla essence
1tsp cloves
1tsp cinnamon
Pinch of nutmeg
Pinch of ginger
Pinch of pink salt
Method
Add everything to a food processor and blitz together.
Scoop out the dough and place in the fridge for 30 minutes.
Remove from the fridge and roll out onto a floured surface.
Use a cookie cutter to cut the dough into circles or shapes.
Place the cookies onto a baking tray lined with greaseproof paper.
Bake in the oven at 160Ā°C for 15-20 minutes.
Remove from oven and allow to cool.
Store in an airtight tin.
