Serve up Deliciously Ella’s date and pecan loaf recipe at a garden party along with delicate tea and a platter of fresh fruit. It’s super simple, with only seven ingredients – one of which is high-fibre buckwheat, which is especially rich in bone-forming manganese and blood-sugar-stabilising copper.
Ingredients (makes 1 loaf)
300g buckwheat flour
200g apple purée
10tbsp Beloved Date Nectar
8 medjool dates
100ml almond milk
1tsp cinnamon
60g pecans
Method
Preheat the oven to 140°C.
Pit the dates and cut them into small chunks. Use your hands to break up the pecans so that they are a similar size to the dates. Then add all of the ingredients into a large mixing bowl and mix thoroughly.
Use a little coconut oil to grease a loaf tin, then pour in the mixture. Bake in the oven for 1 hour 15 minutes, then allow to set for at least 10 minutes before eating hot or cold.
