For a sweet snack that will remind you of your childhood days, we recommend this crispy rice chocolate treats recipe. (Yes, you can lick the bowl – you have our blessing.) This version is made with brown puffed rice and coconut oil, so it’s guilt-free too. Makes 5-10, depending on the paper case size you use.
Ingredients:
40g cocoa
55g raw coconut oil
3 tbsp maple syrup
40g puffed brown rice
Pinch salt, to taste
Firstly, place your oil into a pan on a low-medium heat to melt. Once the oil has melted, remove from the heat and stir in the cocoa powder and a pinch of salt until smooth.
Method:
Then, stir in the puffed rice and maple syrup.
When all of the ingredients are well mixed, take a spoonful and scoop into individual muffin or cupcake cases placed in a baking tray. Large muffin cases will make 5, but you can make more depending on the size of the cake cases.
When this is done, move the treats into the fridge to set for around 2-3 hours, then serve.
