To say this crisped salmon with watercress and soba noodles recipe delivers on nutrition would be an understatement. With four times the vitamin C of an orange, watercress is a skin-loving, immunity-boosting ingredient which research has found also contains a compound that decreases your risk of cancer. Add to this the protein-rich soba noodles to curb cravings and heart-friendly omega-3-rich salmon, and you’ve got one hell of a healthy plate!
Ingredients:
Serves 4
4x 175g boneless, skinless salmon fillets
4tbsp teriyaki marinade
Juice of 2 oranges

2tbsp groundnut oil
Ground black pepper
250g soba noodles (40% buckwheat)
85g bag watercress
