Get a healthy energy boost by snacking on one of these coconut matcha power balls. They’re easy to make and packed full of protein, healthy fats and antioxidants – making them great for a post-workout snack, on-the-go breakfast, or afternoon pick-me-up.
Ingredients (makes 20 truffles)
125g whole walnuts (or almonds)
150g cashew nuts
2tbsp desiccated coconut
2tsp matcha powder
1tbsp Jax coconut oil
8 pitted Medjool dates
Jay Coco Coconut chips (crushed)
Method
First blend nuts into a fine powder, then add all remaining ingredients and process until combined into a dough-like consistency.
Rest in a chilled fridge to help set.
Remove and roll by hand into small balls. Coat with crushed coconut chips.
Chill in the fridge before serving.
