Bake yourself the perfect, healthy snack with these cinnamon and carrot energy bars.
Carrots are high in fibre and beta-carotene. They are also a rich source of vitamin C, which helps boost the immune system. So expect to feel so good after snacking on these cinnamon and carrot energy bars.
Ingredients (makes 12 to 16)
130g egg whites
230g carrots, puréed
120g porridge oats
60g vanilla whey protein powder
½tsp bicarbonate of soda
120ml pure maple syrup
½tsp ground cinnamon
Method
Preheat the oven to 180°C/gas mark 4.
Line a 20 × 20cm baking tin.
In a bowl, whisk the egg whites and carrot purée together. Sift the porridge oats and whey protein over another bowl, then add the bicarbonate of soda, maple syrup and cinnamon.
Combine the wet and dry ingredients, then pour into the tin and bake for 25 minutes.
Cool before cutting into 12 to 16 bars.
Store in an airtight container for up to four days or chill for up to a week.
