Chopped market salad recipe

We love this chopped market salad recipe because not only is it healthy and delicious, it works all year round as the ingredients can be substituted

The joy of this salad is that any fruit or veg can go into it. The greater the variation in texture and colour, the more fun this salad is to eat. The aim is for the salad to look jewel-like with all the different coloured ingredients. Everything is cut into small cubes approximately 1cm square.

We use a mixture of any of the following: carrots, turnips, parsnips and beetroot, celeriac, apples, pears, broccoli, cauliflower, raw mushrooms, celery, fennel, pomegranate and finely chopped green beans.

We add a good sprinkling of chives, parsley or any other fresh herbs of choice, a handful of finely diced dried apricot or figs and cranberries as well as toasted pine nuts or any other toasted nuts of choice.

Place all the ingredients in a large bowl and just before serving, coat lightly with the following dressing.

Honey mustard dressing ingredients:

125ml cup good wine or sherry vinegar i.e. one that isn’t too acidic

1 clove garlic crushed

1 tbsp readymade Dijon mustard

1 tbsp honey

1 tsp finely ground sea salt good grinding of black pepper

375m1 cups good olive oil and sunflower oil mixed
