Chilli wraps recipe

Serves 4

Ingredients:

For the chilli

1 carrot (100g)

3 mushrooms (75g)

1 courgette (200g)

1 onion (100g)

1 clove of garlic

400g chopped tomatoes (1 1/2 cups)

400g tin kidney beans, drained (1 1/3 cups worth)

190g tin sweetcorn, drained (1 cup worth)

3 tbsp tomato purée

1 tsp hot paprika powder

1 tsp mild chilli powder

1 tsp vegetable stock

1/2 tsp cajun spice

1/2 tsp yeast extract (marmite)

1/2 tsp smoked paprika

1/2 tsp garlic purée

1/2 tsp ground coriander

1/2 tsp dried oregano

1/4 tsp nutmeg

1/4 tsp fenugreek

pinch cayenne pepper

salt and pepper, to taste

To serve

about 8 wraps of choice

1 avocado

any other garnish

Method:

Preheat your oven to 250 C /482 F

1. Firstly peel your onion, and chop the ends off of the carrot and courgette. Add them into a food processor with the mushrooms and garlic clove, then blitz until fine.

2. Place a wok or large frying pan onto a medium-high heat, and drizzle with oil. Pour in the blitzed vegetables and fry for about 3-4 minutes, or until they begin to sweat. When the water begins to release from the vegetables, add in your tin of chopped tomatoes, kidney beans and sweetcorn, followed by the tomato puree. Stir all together.

3. Next, add in the hot paprika, chilli powder, cajun spices, vegetable stock, yeast extract, smoked paprika, ground coriander, dried oregano, nutmeg, fenugreek, garlic puree, cayenne pepper and some salt and pepper, to taste. Stir all together, reduce to a medium heat and cook for about 10 minutes, stirring every few minutes, allowing the flavour to develop.

4. When the chilli has cooked, add 2 wraps (for 1 serving) at a time into the oven and cook for 1 minute to soften. When softened, remove the wraps from the oven, and fill with a spoonful of chilli. Top with avocado, or what ever else you like, and then fold one end, followed by the sides. Repeat until you have used up about 8 wraps, or how many you like to serve 4 people.
