Hankering after a post-gym snack that won’t undo all your efforts? These chilli prawn sticks are super-quick to make and will give you a good dose of protein post sesh.
Makes 4
8 cooked and peeled king or tiger prawns
2 bottled roasted peppers in brine, drained and cut into large pieces
1tbsp roughly chopped fresh dill
½tsp dried red chilli flakes (optional)
4 lemon wedges
Thread the prawns and pepper pieces alternately on to four skewers or cocktail sticks.
Sprinkle with the dill and chilli flakes (if you like a bit of heat).
Eat straight away with lemon wedges to squeeze over or keep in the fridge for up to 2 days.
