Ingredients:
Red onion
Garlic
Fresh ginger
Coriander
Fresh chilli
Cashew nuts
Garam masala
Chopped tomatoes
Salt and pepper
King prawns
Greek yoghurt
Mangetout and green beans
Method
In a Nutribullet, add the garlic, cashew nuts, ginger, coriander, chilli, red onion and fresh chilli.
Add one teaspoon of Lucy Bee Coconut Oil into a wok and add the paste. Fry for one minute before adding the chopped tomatoes. Then add hot water to some vegetable stock and pour into wok.
Add the prawns and cook slowly for five minutes. Add a teaspoon of garam masala and greek yoghurt. Fry some greens and serve in a bowl with some fresh coriander on top.
