Cascara cold-infused gin recipe

This cascara cold-infused gin recipe is the coolest new health drink on the block. It’s a cocktail, but not as we know it. If you’ve never heard of cascara before, it’s the dried husk of the coffee cherry. The pulped fruit is collected after the coffee beans have been removed as part of coffee processing, then it’s dried naturally before being milled to produce the cascara husk. Cascara gives a caffeine hit, but it’s not as potent as classic coffee.

Ingredients

300ml Cascara Cold Infusion

250ml gin

150ml pressed apple juice

100ml elderflower cordial

Handful of clapped mint (meaning: clap the mint before you use it)

Ice

Cocktail glass

Method

Pour all ingredients into a jug over ice, stir thoroughly.

Garnish with the mint.
