Blueberry and macadamia smoothie

This summery blueberry and macadamia smoothie recipe makes a refreshing, fruity snack.
It was created especially by nutritional therapist Angelique Panagos to make an energy-boosting, vitamin-packed drink that tastes delicious. Blueberries are an excellent source of vitamin C, plus they can help protect you from heart disease by lowering the amount of cholesterol in your blood. While macadamia nuts are also packed with vitamins and minerals and also contain iron, magnesium and selenium too.

Ingredients

100g blueberries, fresh or frozen

3 handfuls spinach

10-15 macadamia nuts, preferably soaked for 8 hours

235ml coconut milk

120ml water

A blender
Method

Purée all ingredients in a blender until smooth.

If smoothie is thicker than desired, add additional water or coconut milk.
