The thing I love most about making this beautifully simple vegan rice rolls recipe (aside from the fact they’re absolutely delicious) is how quick they are to create, yet how intricate and arty they look. Ingredients
½ avocado
1 carrot
¼ cucumber
Sprigs of basil
Sprigs of mint
Sprigs of watercress
6 rice papers
Method
Slice your avocado, carrot and cucumber into long, thin strips.
Dip your sheet of rice paper in warm water for around 20 seconds. As it begins to soften, lift it out and lay it on a smooth, flat surface.
Lay your sliced veg vertically along the top centre of your rice paper sheet. Fold the bottom half of the sheet over your veg, the left half across your veg. Now roll from left to right to create a snug rice roll.
