Serves 1
Ingredients:
1 banana, sliced, reserve a few slices to decorate 1/3 cup (21⁄2 fl oz/75 ml) coconut water
1⁄4 cup (11⁄2 oz/45 g) fresh pineapple
1 teaspoon lecithin granules
1⁄4 cup (2 fl oz/60 ml) Almond Milk (see recipe) 1 cup ice cubes
Method:
Tip all the ingredients into the bowl of a food processor or blender and blend at high speed until smooth.
Drink immediately or store in the refrigerator, covered, for up to 48 hours.
