Apricot mousse recipe

Dried fruit has never tasted better than in this lovely light and fruity apricot mousse recipe. It is definitely designed to impress! Serves 6

Ingredients

250g dried unsulphured apricots, soaked

300g low-fat yoghurt

Drop of vanilla extract

2 egg whites, whipped

1-2tbsp maple syrup (optional)

Toppings (pick and choose):

Handful pistachios, crushed

1 digestive/gluten-free biscuit, crushed

Dark/milk chocolate, grated

Method

Place the apricots in a medium sized bowl and pour enough to just cover. Leave overnight to soak.

When apricots are soft, discard any water left except a drizzle at the bottom of the bowl.

Using a blender, whizz the fruit to a smooth pulp. Add both the vanilla and maple syrup. Combine well.

Whisk the egg whites until stiff. Fold in the apricot mixture and spoon into glasses/ramekins.

Place in the fridge a least 2 hours before serving. When ready to serve, sprinkle your toppings of your choice.

Any leftovers will keep in the fridge for two days.
