Apple carpaccio recipe

This apple carpaccio recipe with chilli, lime and mint makes a light, refreshing dessert that tastes delicious, plus it’s a healthy yet sweet alternative to stodgy puddings. Apples are a great source of fibre – in particular pectin – which helps to make you feel full. They also contain quercetin, a powerful antioxidant that helps to prevent brain cells from degeneration. They are just a bit of an all-round wonder food really!

Ingredients (serves 4-6)

50g granulated sugar

50ml cold water

1 lime (juice and zest)

1 medium-hot red chilli, finely chopped (or less, to taste)

2tbsp finely chopped fresh mint

3 large (or 4 medium) Pink Lady® apples

Method

In a small saucepan simmer together the sugar and water, stirring until the sugar has dissolved. Boil for three to four minutes until syrupy.

Remove from the heat and stir through the lime juice, zest and chilli. Pour into a small jug and allow to cool.

Using a mandolin slicer, or a very sharp knife with care, slice the apples very finely. Arrange on a flat plate in a pretty pattern. Pour over the cooled syrup and scatter with the mint. Serve immediately.
