Apple and cinnamon breakfast quinoa recipe

Sometimes you just need a warming, filling breakfast to get you through a long day, and this apple and cinnamon breakfast quinoa recipe is ideal. Whether you’re taking on a marathon or just have an epic meeting, this healthy dish will take you up to lunchtime without any stomach rumbles.

Ingredients (serves 4)

170g dry quinoa, rinsed well

350ml water

1tsp cinnamon

2tsp vanilla extract

250g unsweetened apple sauce

40g raisins

235ml warmed skimmed or non-dairy milk (such as almond), for drizzling

1 Gala apple, peeled and diced

Method

 1. Combine the quinoa, water, cinnamon and vanilla in a small saucepan and bring to a boil. Reduce to a simmer, cover, and let it cook for 15 minutes until the quinoa can be fluffed with a fork.

2.Divide the quinoa between four bowls and stir in apple sauce, raisins, and pour in warmed milk. Top with fresh cut apples and enjoy
