Summer’s here, and what better way to enjoy it than with this healthy almond coconut ice cream with white chocolate shell recipe? A veritable superfood, coconut boasts many proven body benefits, such as improved brain function, a health heart and a reduction in sugar cravings. So crack on with this recipe!
Ingredients
(serves 2)
250g coconut Greek yoghurt
1tbsp shredded coconut
¼tsp almond extract
For the white chocolate shell
2tbsp white chocolate, chopped
½tsp coconut oil
Method
Mix all ice cream ingredients together and freeze in ice cube trays for a few hours, or until solid.
When ready, begin thawing the ice cream cubes for about 5 minutes.
During this time, make the shell by melting all the ingredients together in a microwave for a few seconds until fully melted.
Run the ice cubes through a Dessert Bullet chute and into a bowl.
Top with white chocolate shell and enjoy!
