Adzuki bean burger recipe

Try this Adzuki bean burger recipe with herb roasted root vegetables for a filling dinner.
Adzuki beans are little red beans, particularly popular in Asian cooking. They’re a powerhouse of vitamins and minerals and are a low-calorie-dense food, according to the British Nutrition Foundation, meaning they fill you up with out overloading on calories. Make for dinner and save any leftovers for a quick lunch the next day.
Adzuki bean burger recipe
Serves 3-4
Ingredients:
For the burger:
1 400g tin adzuki beans drained (about 1 1/3 cups worth of beans)
handful fresh basil leaves
2tsp dried oregano
2tbsp tomato purée
1tbsp garlic purée
1tsp ground cumin
1tsp ground coriander
1tsp coconut oil
1tsp gluten free flour – I used quinoa flour
Salt and pepper, to taste
For the roasted root vegetables:
2tsp oil – I used coconut butter (if you use coconut oil or butter put it in the oven on the tray for about 1 minute to melt)
1 medium potato
2 beetroots
1 parsnip
1 carrot
5-6 fresh basil leaves
2 garlic cloves
2tsp dried oregano
2tsp tried thyme
Salt and pepper – be fairly generous with these
Method:
1. Pre-heat your oven to 225 C / 437 F. If you are making the roasted vegetables, prepare them first. Peel the potato, carrot, parsnip and beetroots. Chop into fairly small bite-sized pieces – about half the size you would usually cut potatoes for roasting. Finely chop your fresh basil and set aside.
2. Scatter the vegetables onto your oiled baking tray. Slice 2 garlic cloves in half, and place them onto the tray among the vegetables. Pour on top the basil, oregano, thyme and plenty of pepper with a generous pinch of salt. Shake the tray, or turn the vegetables using a spatula so that they are all evenly covered in the seasoning. Place them into the oven and cook for 20-25 minutes, or until crisp and soft on the inside.
3. In the mean time, make your burgers. Add the adzuki beans and all of the other ingredients into a food processor. Blend for a few minutes, or until a burger/patty consistency has formed. You may need to scrape down the sides of your food processor a couple of times.
4. Divide the mixture into 3-4 balls and roll/press into individual burgers. This mixture is fairly delicate so shape them gently. Add some oil into a frying pan on a medium-high heat. Add in one or two of the burgers at a time. Fry for 3-4 minutes on each side, and flip carefully.
5. By the time your burgers have cooked, so should your vegetables, so remove both from their heat, and serve them onto plates. Then enjoy them with whatever else you like to eat your Adzuki bean burger with!
