2. Minted pea and soya bean houmous

Prep time: 10 mins

Cook time: 5 mins

 

Incorporating protein and healthy complex carbohydrates into your diet, such as those in this recipe, can help to nourish your body and balance your hormones to keep you in a better mood. Serves 4.

 

Ingredients

100g frozen petits pois

100g frozen soya beans

100g artichoke hearts (from a jar, drained)

2tsp ground cumin

2tbsp lemon juice

4tbsp olive oil

Small handful mint leaves

Salt and freshly ground black pepper

 

Tip the peas and soya beans into a bowl and cover with boiling water.

 

Leave for five minutes, then drain well and place into a food processor.

 

Add all the remaining ingredients and pulse to make a puree.

 

Season to taste and then spoon into a serving bowl.

 

Cover with cling film and chill until ready to serve.
