Perfect alongside crudités, these 3 delicious skinny dips make a colourful addition to the table. All are a variation on houmous, gluten-free, packed with nutrients and low-calorie. Store in an airtight container and keep in the fridge for up to four days. Note: WHL encourages double dipping.
1. Brazil nut houmous
Prep: 5 mins plus 24 hours soaking
Cook: 5 mins
Total: 10 mins + 24 hours soaking
Brazil nuts are the richest source of the mineral selenium, known to help improve mood and combat depression. They taste gorgeous in this classic Middle Eastern side dish. Serves 4.
Ingredients
180g Brazil nuts, soaked in water for 24 hours, drained and rinsed
1-2 cloves garlic
3tbsp lemon juice
4tbsp rapeseed oil
2tbsp gluten-free tahini
Pinch cayenne pepper
Sea salt and freshly ground pepper
Place all the ingredients into a food processor and blend until you have a smooth paste. Add a little water to loosen if necessary.
Taste and adjust the seasoning and then transfer to a bowl.
Cover with cling film and chill in the fridge until ready to serve.
