The smell of toast in the morning is something we’ve all grown up with. It is a go-to for quick, easy and satisfying breakfasts. Switching your grains, butters and jam for fruit could actually turn a childhood (and adult) favourite into a superfood breakfast that is refined-sugar-free. Here is a reimagined and healthier version of jam and peanut butter on toast.
Serves 1
Ingredients
2 slices bread, toasted (kamut, spelt, rye, etc.)
1tbsp cashew butter (or almond)
1-2 handfuls blueberries
2tsp chia seeds
Spread your toast with the cashew butter.
Arrange the blueberries on top of the toast, you can smash one or two into the butter as well.
Sprinkle each toast with a teaspoon of chia seeds. Serve.
