The ultimate hangover cure salad recipe

Thought that loads of processed carbs were the only way to feel better the next morning? Try the ultimate hangover cure salad recipe from Eddie Holmes and Chop’d, instead

Serves two

Ingredients:

120g mixed baby leaves

60g shredded carrot

75g cooked Puy lentils

75g cooked red Camargue rice

75g cooked quinoa

75g cooked peas

120g roast chicken

60g beetroot

100g fresh pink grapefruit

60g steamed broccoli

10gms flat leaf parsley

To taste

Fresh lemon juice

Extra virgin olive

Sea salt

Black pepper

Method:

Mix the lentils, rice, quinoa and peas together and use as a base layer.

Mix the leaves, broccoli and beetroot together and place in on top.

Add the chicken and grapefruit.

Season everything to taste.
