If you’ve got a chocolate craving this hazelnut and chocolate mousse recipe from Olivia Daly will hit the spot.
Serves 4
150g 85% dark chocolate, broken into chunks
100g ground hazelnuts
 4 organic free range eggs, separated
Melt the chocolate in a saucepan over heat (i.e. put the chunks in a small Pyrex dish that fits into the rim of a saucepan that is 1/4 filled with boiling water, stirring it from time to time).
Remove the bowl from the heat and gently stir in the hazelnuts and the 4 egg yolks, one at a time. Whisk the egg whites until they form peaks (so stiff that if you turn the bowl upside down they won’t fall out).. Use a metal spoon so that the air doesn’t escape from the beaten egg.
Take one spoonful at a time and fold into the mixture, being careful not to lose air. Spoon into a bowl or individual ramekins and allow to set in the fridge for at least an hour.
