Comfort food doesn’t have to be unhealthy! This Berry and apple quinoa crumble recipe from Sally Roch uses seasonal fruit and quinoa flakes for a healthier take on the traditionally sugary crumble.
This crumble is the perfect end to a hot winter’s meal. It is also super speedy to make.
Serves 4
For the fruit base 1 eating apple (I used Braeburn), thinly sliced 200g berries (fresh* or frozen) 1tsp cinnamon 1tsp ginger 2tbsp water * If using fresh add a 1-2tbsp of orange juice
For the topping: 75g butter
100g plain flour
25g quinoa flakes
25g oats**
100g demerara sugar
**gluten free if required
If using frozen berries defrost overnight.
Preheat the oven to 180C.
Core and cut the apple into thin slices. Put them into a pan with water and cinnamon and cook over a medium heat for around five minutes, until the apple starts to soften.
Place the flour and butter in a large bowl. Rub the butter into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs. Then sprinkle in the sugar, oats and quinoa flakes. Combine well.
Transfer the fruit mix to an ovenproof pie dish then sprinkle the crumble mixture on top.
Bake in the oven for 35-40 minutes until the crumble is browned and the fruit mixture bubbling.
Serve with crème fraiche or custard.
