There’s no doubting granola has earned itself a bit of a bad rap lately. The store-bought stuff is laden with sugar with not much by the way of the nutrition, but this simple recipe from Hollie Henderson throws the rulebook out and uses healthy ingredients like chia seeds and coconut to give you a serious hit of nourishment in the morning. Ingredients
3 cups coconut flakes
80ml melted coconut oil
1 cup pecans
1 cup cashews
3 tbsp chia seeds
½ cup pumpkin seeds
½ cup almonds
Optional: 2-3 tbsp honey
Method
1. Preheat the oven to 180C.
2. Thoroughly mix all of the ingredients in a bowl, then spread the mixture evenly on a baking tray.
3. Place in the middle of the oven, and use a spoon to turn the mixture over every five minutes.
4. When it’s all evenly browned and crunchy (the browner it is, the crunchier it is – this is up to you!), remove from the oven. This will take approximately 15-20 minutes.
