Cacao, date and banana pudding recipe

Mmm, mmm! Rustle up a cheeky sweet treat – without the hefty calorie hit – with this amazing cacao, date and banana pudding recipe from The Detox Kitchen. It’s a great way to finish off a healthy dinner party – and a great treat to take over to your mates’ houses if they’re cooking for you.

Serves 4

200g dates, pitted
60g ground almonds
100g hazelnuts
2tbsp cacao powder
60g almonds, finely chopped
2 bananas
Pinch Malden salt

Soak the dates in hot water for 5 minutes, then drain.

Place the dates, ground almonds, nuts and cacao powder in a blender and blitz for 2 minutes until smooth. Place this mixture in a mixing bowl and add the chopped almonds. Mix well and place half of the mixture in a small serving dish.

Slice the bananas and place a layer of sliced banana on top of the chocolate and then add the second half of the mixture. Using a spoon, flatten the mixture out before adding the second layer of banana. Place this in the fridge for 2 hours to set. Serve each scoop with a tiny pinch of Malden salt.
