Try this gluten and dairy free quinoa bircher muesli recipe to kick-start your day.
We love quinoa, the superfood that’s packed with protein and complex carbs to keep you full and energised. Plus the apple, cinnamon and dried fruit add a nice hint of sweetness.
Prep time: 10 minutes, plus soaking overnight.
Cooking time: 12 minutes
Ingredients
(serves 2)
½ grated green apple
40ml water (for soaking)
50ml apple juice
70g of cooked quinoa
30g gluten-free oats
½ tsp cinnamon
2tbsp dried fruit of your choice
1tsp pumpkin seeds
1tsp pistachio nuts
1tbsp coconut yoghurt
Method
To cook the quinoa measure 30g and rinse in a strainer (this is to improve flavour even more). Bring 70ml water to the boil in a small uncovered saucepan. Cook on a medium-high for 6 minutes. Take off the heat, cover and leave to rest for 6-7 minutes. Fluff with a fork.
Combine oats with water and apple juice in a bowl. Leave to soak overnight.
Add quinoa, cinnamon, dried fruit, yoghurt and grated apple to the mix.
Sprinkle with sunflower seeds, nuts and fruit on top for extra sweetness and crunch.
