Try this serioulsy tasty Quinoa, lentil & feta salad recipe as a tasty lunch or healthy side dish.
Ingredients
185g quinoa
1tsp olive oil
½ onion, finely chopped
Handful golden sultanas
Handful dried cranberries
125g spinach
400g can green lentils rinsed and drained
100g feta cheese, crumbled
6 spring onions, thinly sliced
Zest and juice of 1 orange
1tbsp red or white wine vinegar
Method
Cook the quinoa in a large pan of boiling water for 10-15 mins until tender, drain well, then set aside to cool.
Heat the oil in a small pan, then cook the onion for a few mins until softened. Add the golden sultanas, dried cranberries and spinach stir well, until the spinach has wilted then remove from the heat.
Stir the softened onion and fruit mix into the cooled quinoa along with the lentils, feta, spring onions, orange zest and juice and vinegar. Toss well together and chill until ready to serve.
