When the sun is shining and you’ve got a glass of Pimm’s in hand, it’s easy to forget that you still need to keep your healthy eating in check, too. You might be tempted to skip food prep, opting more for the convenience of eating out or perhaps just grabbing some nibbles in the beer garden, but these light and refreshing summer rolls from Pho are easy to make, taste delicious and are perfect for summer. Give them a go!
Ingredients
Finely shredded lettuce
Whole mint leaves
Coriander or other Vietnamese herbs
Carrot and mooli pickle
Cooked thin vermicelli rice noodles
22cm rice papers
Cooked tiger prawns sliced lengthways or thin slices of chicken breast
Wash your hands. Use a clean damp towel to roll on.
Dip rice paper in warm water to soften and lay flat on damp towel.
Place mint leaves in a line across the lower third of the rice paper.
Lay prawn or chicken slices across entire width of the rice paper, leaving sufficient space at the end to fold in.
Add in other ingredients, and then roll it up, away from you.
Store chilled under damp, clean tea towel.
Serve whole or sliced in two, with dipping sauce.
