Avocado waffles

Avocado waffles
Know a fussy eater? Avocado waffles are the easiest way to sneak the superfood into their diet. Serve immediately with your favourite toppings – we love nut butter or berries – for a breakfast offering sure to make others green with envy!
Makes 3 to 4 waffles
Ingredients
1 cup unbleached all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1⁄2 teaspoon kosher salt
1 cup unsweetened almond milk or milk of choice
1⁄3 cup smashed avocado, fresh or frozen and defrosted
1⁄4 cup water
1 tablespoon melted coconut oil, plus more for cooking
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract syrup, fruit, nuts, or
honey, for serving (optional)
Method
In a large bowl, whisk together the flour, sugar, baking powder, and salt, and then form a well in the center.
In a medium or large bowl, mix the almond milk, avocado, water, oil, vinegar, and vanilla until smooth. Pour the milk mixture into the well in the flour mixture, and stir with a fork until just mixed. Lumps are ok, but try to get all the dry ingredients on the sides and bottom moistened.
Heat your waffle iron at its highest setting, and brush it lightly with coconut oil. Pour about 1⁄3 cup of the batter onto the iron, and follow your manufacturer’s instructions for cooking, likely about 3 minutes. Take care opening the waffle iron; if it doesn’t want to open, let it cook a little longer.
Serve immediately with the toppings of your choice, or keep the waffles in a warm oven until ready to serve. Waffles can be reheated in the toaster later.
