Fancy a little weekend treat? Check out this yummy drop scone recipe from Danio. Perfect for a luxurious brekkie or brunch, or a cheeky dessert.
Mango Drop Scones
Serves 2 (makes 8 drop scones)
Prep: 12-15 minutes
Ingredients
1 pot Mango Danio
100g self-raising flour
Pinch of baking powder
1 medium egg
4-6tbsp skimmed milk or cold water
Selection of soft berries, such as blueberries, strawberries, raspberries
Method
- Mix the flour and baking powder in a bowl pot of Mango Danio, until evenly mixed, to form a batter.
- Stir in the beaten egg, milk or cold water, and add one pot of Mango Danio, until evenly mixed, to form a batter.
- Preheat a heavy-based, non-stick frying pan and drop spoonfuls of the batter onto the surface, two at a time.
- Cook until bubbles rise to the surface and after about 3 minutes, turn the drop scones over using a palate knife.
- Cook until golden brown on both sides.
Serving suggestion
Decorate with a selection of soft berries and a scoop of Danio yoghurt for a taste of summer
