On a weekend morning, you can’t beat the classic eggs on toast. Here, we’re scrambling them and adding tomatoes and spinach for a nutritional boost. Just add a pot of coffee and a smooth Sunday playlist.
Ingredients
2 eggs
A splash of Alpro Almond Unsweetened drink
Black pepper and a pinch of salt
20g fresh spinach
1-2 slices of wholemeal bread
Handful of cherry tomatoes
Method
Beat the eggs with Almond Unsweetened, then season with black pepper and a pinch of salt.
Heat a frying pan with a little oil, then add the egg mixture, stirring constantly. Once the egg mixture begins to cook, add the spinach into the pan to wilt.
Meanwhile, toast the bread until golden brown. When your eggs are cooked to your liking, plate up your toast, top with the eggs and spinach, then add a handful of cherry tomatoes to finish.
